t’s the end of the grocery week (I grocery shop on Thursdays), so I decided to make a soup with the chicken and veggies left over in my refrigerator.
**Ingredients**
* 3 Celery stalks
* Three carrots
* 1/4 Red onion
* four garlic cloves
* Spinach
* one can of white beans
* two chicken breasts
* Parsley
* Cheddar cheese for garnish
* Salt & Pepper
* Bacon grease
* Homemade chicken stock
**Instructions**
1. Diced all veggies (except spinach) and cooked them in bacon grease for 4-5 mins
2. Added the white beans and cook for 3-4 mins
3. Added the chicken stock (1 L) and another 2 litres of cold water
4. Added the chicken breast
5. Bring everything to a boil and then simmer for 20 mins
6. Removed the breasts, shredded them with two forks and readded them to the pot
7. Simmer for another 10-15 mins
8. Salt & pepper to taste
9. A little shred of cheddar cheese
10. Eat with a nice slice of crusty bread

Looks delicious and healthy! I can’t wait for it to get colder so I can have an excuse to make stuff like this every day.
