It's Friday night! I wanted something simple but tasty. I made a Thai panang curry of beef topped with lime leaves chillies and freshly toasted cashews. On the side I added a salad of cucumber lettuce and herbs dressed with lime juice fish sauce and palm sugar. And I served them with long grain rice. It was delicious!

  1. Sold. I’m getting this for lunch today. There’s a Thai place that makes killer Panang Curry with crispy chicken near me. They use thighs. So freaking good.
