  1. I followed this [excellent recipe from Lan Lam to sautee the mushrooms and make a delicious pan sauce with it.](https://youtu.be/rzL07v6w8AA?t=310) This went well over pan fried chicken thigh with perfectly crispy skin and over a bed of mashed potatoes.

    Some really good barrel aged balsamic vinegar to finish the pan sauce is chef’s kiss. Ditto with using sour cream in the mashed potatoes!
