Just pulled them out of the chamber today. Weight loss ranging from 18% for the fatty ones to 25% for the meaty pieces. These are cured with #2 I don't think i need to equalize as my chamber is kept at 14C and 75% rH. Thoughts? by putstuibeo Charcuterie
