Classic Italian Risotto Ai Funghi for vegans.
Ingredients:
300 Grams Arborio or Carnaroli rice
1 Litre of vegetable stock made into a broth.
1 onion
500 grams of finely chopped mushrooms
handful of parsley
100 grams of vegan parmesan (if you cant get this use 1/2 cup nutritional yeast andbadd more if required)
1 cup of white wine
Olive Oil
Salt / Pepper
