I made a few substitutions: swapped in beef bone broth for more protein than regular beef broth, used fat free cottage cheese instead of ricotta, and we used 93/7 instead of 99/1 for $ saving.
I’m weird about textures so I blended up the tomatoes and rotel before mixing in. I also blended the cottage cheese.
Cooked everything in one pot and it was ready in under 40 minutes. Optional to the side is a slice of Sola bread with butter spray and garlic powder for some garlic bread.
When reheating, add a little water or broth because the noodles soak up a lot of the juice. I also added a little extra cottage cheese when I reheated for creaminess.
