Broccoli cheese soup with sausage. 519 calories and 33g protein for TWO bowls.

  1. I could’ve posted this as just one bowl at 260 calories, but realistically, I’m going to eat the rest after I post this comment.

    For the cheese sauce I used just double the amount of potato as carrot, as much nutritional yeast as I wanted, and a cup of nut milk. You could play around with this, my ratios were based on just how many potatoes I had on hand.
    ETA: I also included garlic powder, seasoned salt, onion powder, and about a tablespoon of lemon juice.

    For the soup I fried up a sausage and set it aside. I then fried 50g of onion in the same pot with just a little bit of water. I added the broccoli (185g) and a cup of broth and let it cook 15 minutes. Then I pulsed that mixture in the blender and added it back in the pot. I eyeballed what ended up being 173g of the cheese sauce then thinned it out with 2/3 cup more broth then added the sausage back.

    You could make this without the sausage if you wanted to pair it with a lower calorie protein instead. Would make the two bowls of soup only 229 calories total, or 115 calories per bowl.
