Glass noodles with vegetables & vegan chicken/ 484 kcal /31.4g protein

  1. DISCLAIMER: the picture is only 1/2 of the total amount i made, so the calories & macros provided are for double the amount of food you see in the picture! But i must say, even the 1/2 portion you can see is VERY filling.

    Also, the ingredients list says “taco seasoning” but i actually used chinese seasoning blend – i only said taco seasoning because i couldn’t find chinese seasoning on Cronometer. But it doesn’t matter calorie-wise.

    Recipe is easy – you just pour boiling water on the glass noodles (the weight on the ingredients list is for dry noodles), let it sit for 5 minutes, drain, set aside. Put all the veggies + chicken into the pan with a little bit of water, soy sauce, sugar and seasoning+bouillon cube. Cook until veggies are soft but still a bit crunchy. Add the glass noodles, stir for 1-2 mins and enjoy.
