Here’s the lentil salad recipe. The muffins were from Protein Ninja by Terry Romero. I was really surprised how good the muffins were- even my picky 10 year old liked them!
1 cup dried French green lentils, cooked and drained
3 small garlic cloves, minced
1 TB olive oil
1/4 C lime juice
1/2 tsp sea salt
1/2 C fresh cilantro, chopped
1 C chopped cucumber
1/2 C quartered cherry tomatoes
20 diced black olives
Mix garlic and olive oil in a large bowl, pressing the garlic with a fork into the oil & against the bowl. Add the lime juice & sea salt & whisk well.
Combine everything else and toss in the dressing. Cover and refrigerate for at least 1 hr. Makes 5 servings.
what do the green lentils taste like? i’m scared to try them just in case there really dry. do u recommend putting them with anything ?
