    This was my first time trying soy curls and it was really good! Also the stir fry makes a huge portion, super filling.

    30g soy curls
    90g broccoli florets (about 1 cup)
    50g kale, roughly chopped
    40g green beans cut into bite sized pieces
    40g red pepper, cut into strips
    1 clove garlic, minced
    1 1/2 tbsp vegetarian oyster sauce
    1 tbsp tamari
    1 tsp rice vinegar
    1/2 tbsp gochujang (or another spicy chilli sauce)
    1/2 cup brown rice, to serve

    Soak the soy curls in water for 10 mins. Boil the broccoli until fork-tender and drain. Sauté the garlic in a bit of water until fragrant, then add the pepper, kale and green beans. Cook until kale is wilted and veggies are tender. Add in the broccoli, soy curls and sauces and cook until some of the excess liquid is boiled off and the veggies have reduced in volume somewhat. Serve with 1/2 cup brown rice.

    I added a little too much water while frying the veggies so it was a bit liquidy at first but I just simmered it on low heat for a while and it fixed itself. Also I made a double portion so there’d be leftovers!

  2. Soy curls are delicious. My husband buys them in bulk and makes a meal with them like daily.

  3. That looks so good! Where did you buy the soy curls? I love tvp which is kind of similar but I’ve always wanted to try soy curls.
