    Ingredients:
    2 oz dry soba noodles
    1/2 large carrot
    1/2 large zucchini
    1/2 mini pepper
    Few slices of onion
    1.5 cups spinach
    1 tbsp tamari
    1 tbsp rice vinegar
    1/4 tsp sesame oil
    Radish and green onion to top

    Cook the noodles according to package instructions. Shred carrot and zucchini and dice onion and pepper. Sauté onion in some water, add carrot zucchini and pepper and cook until soft. Add in cooked noodles, spinach, tofu, tamari and rice vinegar and cook until spinach is wilted. Garnish, drizzle a bit more tamari and vinegar as well as sesame oil and serve!

  3. I made this tonight with some Sriracha sauce and some frozen stir fry vegetables. Very filling. Thanks
