I brushed the eggplant with one tablespoon of olive oil and cooked on a cast iron skillet, about 5 min each side, until there was a bit of char on the outside but soft on the inside. Rest of the bowl is mostly assembly of rice, lentils, chopped tomatoes and basil, all with a hearty drizzle of balsamic glaze on top and a good dose of fresh black pepper and flaky sea salt!
Is a half cup of cooked lentils really only 81?! Whattt. I thought 1/2 cup cooked was closer to 115-160 depending on the type of lentil??
