Baked sweet potato
Poke lots of holes in potato with fork, sprinkle lightly with salt & pepper. Bake @ 425°F for 45-60 minutes depending on size of potato.
Fresh guac
Mash half an avocado. Finley chop sundried tomato. Season with fresh cracked pepper. Splash of lime juice optional!
Curried Chickpeas
Rinse chickpeas (I used canned). Season with curry powder, cumin, coriander, onion powder, garlic powder. Sauté in heated pan using little splashes of water to help cook and prevent sticking.
Tahini dressing
Whisk together tahini, maple syrup and 1 tbspn of water in a small bowl. Add a bit more water to create desired consistency. A squeeze of lemon juice would also be nice!
