  1. Bowl has steamed broccoli, multi-color quinoa, grilled bell peppers and onions, and oven baked tofu – recipe below.

    – 1 block tofu, cubed
    – 1tbsp olive oil
    – 2tsp garlic powder
    – 2tsp onion powder
    – 1 tsp paprika
    – 2tbsp cornstarch

    Preheat oven to 400. Toss the cubed tofu with olive oil and spices. (I like to do this in a bowl with a lid rather than with a spatula/spoon to avoid breaking the tofu) Add cornstarch and toss again. Line a baking sheet with parchment paper. Place tofu on baking sheet and bake for 30min, turning tofu halfway through.
