  1. recipe (total yields 691 grams):

    * 1 can 15oz canellini beans
    * 1.5 jars of hearts of palm, chopped
    * 50 grams chopped red onion
    * parsley, approx .75 cup
    * 40 grams celery chopped
    * 1/2 cucumber
    * zest of lemon to taste

    dressing:

    1 tsp dijon mustard, red wine vinegar, lemon juice, salt, pepper, dash sweetener, dash vegan chicken salt for oomph

    tip: don’t add oil to the vinaigrette, instead use spray oil (avocado or other kind) and spritz your salad right before serving. You use less oil (food doesn’t absorb oil from dressing), but still get the flavor. Spritz of oil is included in cals.

  2. I enjoy hearts of palm chopped, roasted, and then sprinkled with a little old bay. So good.

    I had no idea they had so much protein! I got hearts of palm tacos (the only veg option) at a taco place and just assumed I was basically eating a nutritionally void taco but apparently I got some protein too ☺️

    Question. (This looks delicious!) But the cannelini beans I’ve bought are 100cal for ~ 1/2 cup, with there being about 3.5 servings in a can. Unless I missed it… you have an entire can used here, so is this more than one serving?
