This is my first attempt at making coppa after successfully making bacon. I followed this recipe and I think I might have made a mistake right from the beginning… I followed the instructions, but I added I added in the ingredients in the top right list to the salt and pepper. Including the wine…. Am I an idiot? Is my coppa pretty much doomed from the start?

Would love any kind of advice or guidance. Like I said I am just starting out and trying to learn.

  3. I do my EQ cures always at least 7 days, but that’s personal preference.

    I don’t see why should it be doomed, what specifically has you worried?

    The way the ingredients are presented is confusing. But from how im reading it, all your seasonings get combined at once. So, you did the right thing.

    I’ve done a ton of coppas and bresaola and what not. Everything gets mixed together and thrown in a vacuum bag. I’d say you’re fine.

  5. All of your aromatics and such are supposed to be in the initial brine. No worries there. After calculated time in salt or EQ… Rinse, dry and re-apply aging herb and aromatic brew. Then hang. Enjoy!
