Funfetti Birthday Cake Sugar Cookies (47 cals each!! 🥳) Crispy exterior, soft interior!

  1. I made a bunch of these recently to keep me company for another birthday in quarantine and loved the color that it added to my life heheh.     **MACROS (Batch of 8):**

    * Per cookie: 47 cals (1g P • 6g NC • 2g F)
    * Whole batch: 378 cals (8g P • 47g NC • 14g F)

    Note that these don’t really spread in the oven, so I took my fingers/back of a spoon to spread out the cookie dough before baking. Mine came out to be around 2.5 inches in diameter.

    If anyone doesn’t have instagram:

    🦄INGREDIENTS (makes 8) 🦄
    60g all-purpose flour (sub whole wheat/oat)
    48g sweetener (I use @lakanto monkfruit, *see notes)
    1/4 tsp baking soda
    1/8 tsp or a pinch of salt
    28g light butter, softened
    25ml cashew/almond milk
    optional: sprinkles (7g for me)

    1. Mix together softened butter & sweetener until smooth.
    2. Add dry ingredients until mix is crumbly.
    3. Add milk gradually (you may not need all of it, or might need more) until you get a not-too-sticky-ish dough.
    4. Fold in sprinkles if desired.
    5. Let batter set in fridge about 15 mins so it’s easier to handle, or just plop on parchment/silicone mat right away. You may need to wet your fingers/back of a spoon a bit and press dough down as it doesn’t really spread while baking. Or just have cookie dough plops!
    6. Bake ~10 mins @ 350 F. Let cool so they firm up a bit before shoving in your mouth.

    🍀NOTES🍀
    *Depending on sweetener used, the cookies might have a mild “cooling effect” which I find happens with erythritol.
    *For size reference, mine were about 2.5 inches in diameter per cookie.
    *Uhhh so my sprinkles melted while folding the batter so I’m gonna have to get more quality sprinkles. But it gave a fun unicorn marble effect! 😅
