  1. To make the kale (one of my go-to simple veggies): I used .5 tbsp olive oil to saute 2.9 oz onion, some red pepper flakes, salt, and a clove of garlic, and then the 3 oz of kale. I added ground pepper and lemon juice at the end.

    The black beans (weighed 6 oz cooked) I made in the instant pot from dried black beans cooked at high pressure for 45 minutes.

    Finished it off with 3 tbsp of salsa on top (Green Mountain Gringo is my favorite grocery store brand, and has no added sugar).

  2. I’m gonna make this for breakfast tomorrow! I’ve been looking for more kale recipes.
