Ingredients
Shirataki noodles – 0 calories
2 x Hungry Planet beef patties – 300 calories
16 oz broccoli – 154 calories
1 onion (medium, white) – 44 calories
2 cups mushrooms (white) – 25 calories
1 can pureed pumpkin (15 oz) – 157.5 calories
42 g sun-dried tomato – 105 calories
Directions:
Non-stick spray and saute onion and fresh garlic.
Once fragrant add Hungry Planet beef patties until warmed through and able to break apart/crumble. Add mushrooms and broccoli. Season with salt, cajun seasoning, black pepper and crushed red pepper or cayenne if you like spicy.
Added an entire can of pureed organic pumpkin and another can of water. Topped off with 42 grams of sun-dried tomato (in vacuum pack and not in oil).
Might be nice to finish off with some nutritional yeast or non-dairy cheese but I enjoyed as is.
I use House Foods zero calorie shirataki noodles.
A note on the sun-dried tomato: I understand this is a high calorie count relative to the rest of the ingredients. Honestly do what makes you happy. I love the little pop of sweet from the small chunks of sun-dried tomato. For some of you that may be nutritional yeast or make it creamier with coconut milk, etc. Do what you need to do to stay on track.
You can literally add this to 16 ounces of shirtaki noodles (there is a ton of sauce). I used an 8 oz bag.
