    Bratwurst and Italian sausages. 1.5% salt. Pinot gris in the Italian and kolsch in the brats.

  3. Are these hung to dry in a walk in fridge? Or do you just hang them for a bit and cook them fresh Won’t they dry too quickly? Also they seem packed a little tightly together. Can you give a little more info on what your plan is? They look great
