Ingredients: Basmati rice – 1 cup, lemon juice – half cup, lemon zest – a teaspoon, ground turmeric – 1 teaspoon, cumin and black mustard seeds – half teaspoon each, 6 eggs, 1 medium onion(chopped), 3 medium Roma tomatoes (chopped), 2 big cloves of fresh garlic (finely minced), 1 teaspoon raw fennel seeds, 2 teaspoon ms paprika, 1 teaspoon cayenne pepper, 1 teaspoon ground coriander( powder), 1 teaspoon ground cumin(powder), a handful of chopped fresh cilantro, salt and black pepper to taste.
Cooking instructions:
Step 1 – Cook 1 cup basmati rice with two cups of water. I use an electric rice cooker. When done, fluff up and set aside.
Step 2 – Hard boil eggs. Peel and when score them diagonally. Don’t go too deep, I just score the white part. This is an optional step. You don’t have to score the eggs if you don’t want to.
Step 3 – Lemon rice: In a skillet, heat a tablespoon of cooking oil on medium heat and season it with black mustard seeds and cumin seeds. Lower the heat to low and add turmeric powder, lemon zest (you zest only the top yellow portion of the lemon with a zester or cheese grater) and lemon juice. Let cook for a minute. Now add the fluffed up cooked basmati rice and give it a good stir. Add salt to taste. Squeeze some more lemon juice on top if you want it more lemony.
Step 4 – Egg curry: in a sauce pan, sauté chopped onion along with fennel seeds in a tablespoon of cooking oil on medium heat until lightly browned. Add minced garlic, ground coriander, ground cumin and sauté some more until garlic is cooked. Add chopped tomatoes, paprika, cayenne pepper and black pepper and salt and let it cook until tomatoes are well cooked. Drop the boiled and scored eggs into the curry and add chopped cilantro. Give everything a nice stir and turn the heat off. Adjust salt.

Looks so good! I made something really similar recently but just swapped out the eggs for tofu and it was delicious. trying to stop my egg consumption for the poor hens and chicks that get shredded alive 🥺
