1 (15-ounce) can chickpeas, drained, rinsed, and dried
4 mini cucumbers
salt
juice from half a lemon
½ cup finely chopped cilantro
one link of vegan sausage, cut into bite sized pieces
EVOO
1 teaspoon ground cumin
Black pepper
red chilli flakes
Oregano
1. Heat broiler on high (~500 deg T)
2. Cook couscous according to package instructions
3. Dry your couscous as much as possible (let sit for some time or manually pat dry)
4. spread couscous, chickpeas, sausage, and halloumi on a sheet pan
5. smash cucumbers with the side of your knife or something else blunt and cut into 1/2 inch pieces. Irregular edges really make this dish!
6. Add lemon juice, a pinch of salt, some shakes of oregano, a tbsp of olive oil, and herbs to cucumbers
7. Dress sheet pan ingredients with ~3 tbsp of oil, S&P, and cumin, toss to coat everything
8. Broil for 7-10 minutes, agitating/shaking every few min. Everything should come out crispy and with color
9. serve grains/beans/cheese/sausage with cucumber salad added over the top. Dress with more olive oil, lemon juice, pepper, and red pepper
