I got this Le Creuset dish as a work gift, what is the first thing I should cook with it?

  1. Wow nice pan! And nice gift.

    Roasted veggies?

With a nice horseradish sauce on the side.

  2. If you have NYT cooking, they have a really great recipe for eggplant in a chickpea tomato sauce that would be great in this.

Quarter 16 to 20 oz brussels sprouts, then drizzle with olive oil to lightly coat and put in a 420f oven for 5 mins while you make this sauce in a hand blender:

    4T smooth peanut butter

    6T pineapple juice

    2T soy sauce

    2T maple syrup

Coat the brussels with the sauce, and finish roasting until caramelizing/crisp bits form.

I like to enjoy this with brown rice and pan-fried extra firm well-pressed tofu.

I’d go with a pasta dish for sure…

    – Baked spinach & ricotta manicotti in red sauce with mozarella/parm on top

    – Baked penne in a bechamel or veloute with cubes of roasted butternut squash, dollops of garlicky/parm spinach and a little gruyere/swiss/parm on top

    – Mushroom & leek lasagna with a bechamel sauce and comte cheese on top

    Possibilities are endless!

    Meatloaf 🥸

Lol, but seriously, that reminds me of the thing my mom cooks meatloaf for my dad in 🤢🤮

  6. Shoe Peg Casserole

1 can shoe peg corn (undrained)
    1 can string beans (drained)
    1 small chopped onion
1 can cream of mushroom soup
    12 oz. grated cheddar cheese

2 sleeves of crushed Ritz crackers
    1.5 sticks melted butter

Mix all ingredients together (except crackers and butter)
    Put in a casserole dish.

Mix crackers and melted butter and pour over casserole.

Bake 350 degrees for 30-45 minutes until starts bubbling around crackers.

Lasagna is always a good choice! Just make sure it’s veggie-friendly 😉
