Whole wheat Rotini pasta with fresh parsley pesto.

    Pesto recipe:

    Ingredients: 2 bunches fresh Parsley, 4 to 5 garlic cloves, 1/3 cup pine nuts, 1 tablespoon lemon zest, 3 tablespoons lemon juice, enough extra virgin olive oil to blend it smoothly, salt and pepper to taste.

    Directions: Put chopped parsley, peeled and chopped garlic, pine nuts, lemon zest, lemon juice, salt and pepper in the food processor and blend everything smoothly while adding olive oil through the spout. Blend it to a smooth paste.

    Pasta recipe: I used whole wheat rotini. Boil the pasta in salted water until al dente. Drain the water and toss the pasta with the above parsley pesto. Serve it with some Parmesan/your favorite cheese on top. I served mine with crushed red pepper flakes and a boiled egg.
