It was a rough day. All I wanted was easy comfort food.

Used a whole box of pasta, cook until about al dente

For the sauce
5 tbsp salted butter
5 tbsp flour
2 ish cups oat milk
Gouda
Havarti
Cheddar

Made a roux, added the milk. Season to taste at this point- I used a rosemary and garlic salt, mustard powder, onion powder and garlic powder. When it’s somewhat thickened up slowly add cheese of choice (shredded, cubed etc) to make a mornay. Stirred in the cooked pasta when the sauce was set to let it all meld for a bit.

Just a plain and basic Mac n cheese recipe, bit it’s perfect comfort food and like how my mom used to make it when I was a kid.

  1. can you give me which cheese brands you used? I’m not actually a vegan, but I watch this sub because I have some dairy issues and like to reduce animal products used. I have made some vegan mac and cheeses which came out ok, but I felt could be better.
