364 Cal lunch. I made tofu with Thai peanut sauce, rice, and sesame crunch salad.

  1. Thai peanut sauce, 8 servings (½ cup)

    >2 tsp regular Peanut Butter (melt a couple of seconds in microwave)
    >
    >2 T PB2
    >
    >2 tsp sesame oil
    >
    >2 T Soy sauce
    >
    >1/4 tsp garlic minced or shake of garlic powder
    >
    >squeeze of lime juice
    >
    >Brown sugar type sweetener, to taste (sauce should have an overall sweetness to it)
    >
    >1 tsp rice vinegar
    >
    >water to thin

    2 servings of crunchy salad & dressing:

    >64 g bell pepper
    >
    >61 g carrot
    >
    >2 radishes
    >
    >134 g snow peas (microwave for a few seconds)

    Dressing, 2 servings:

    >½ T Thai sweet red chili sauce
    >
    >dash of sweetener
    >
    >1 T soy sauce
    >
    >½ tsp sesame oil
    >
    >squeeze of lime juice

    Also: 75 grams of rice

    Tofu was pan fried with a little soy sauce + chili sauce added for color/flavor
