* Extra-virgin olive oil
* Cremini mushrooms (I used half baby bella/cremini and half white)
* Garlic
* Salt
* Ground pepper
* Baby spinach
* Egg
* Part-skim ricotta cheese (I used cottage cheese)
* Shredded mozzarella
* Grated Parmesan cheese
* Marinara sauce (I made my own using [this recipe](https://downshiftology.com/recipes/marinara-sauce/#wprm-recipe-container-33591). I felt like I didn’t have enough when I was assembling, but it turned out great!)
* Oven-ready lasagna noodles
* Zucchini
This had a bit of prep, but the assembly was was fast and it turned out so good! I also like that it made a large portion for lunches and left overs. Definitely keeping this one in the rotation!

I too am making the marinara sauce from scratch. Considering making bechamel but we already got the ricotta. Cheers!!
