Instructions
* In a large pot, heat the oil over medium heat. Add the onion and cook for 4 minutes or until softened.
* Add the garlic and ginger and sauté for 1 minute until fragrant.
* Add the broth and water. Increase heat to high and bring to a boil.
* Stir in the tamari, Sriracha and rice vinegar.
* Add the rice noodles to the pot and allow them to sit for a few minutes until softened.
* Garnish with optional toppings, if using, and serve immediately. I did not have so couldn’t use.
How I adjusted the recipe:
– Added edamame, broccoli, shredded carrots
– Did not have vegetable broth so used 6 cups of water with bullion cube
– Did not have tamari so used soy sauce

Asian Spicy Noodle Soup
Ingredients
* 1 tablespoon sesame oil
* 1 yellow onion, diced
* 2 cloves garlic, minced
* 2 teaspoons fresh grated ginger
* 4 cups vegetable broth
* 2 cups water
* 2 tablespoons organic tamari
* 2 teaspoons Sriracha
* 1 teaspoon rice vinegar
* 8 ounces rice noodles
* Optional garnishes: Sliced green onions, chopped fresh cilantro, and sesame seeds
