I was craving Indian tonight.
Rice with homemade raita (https://www.jamieoliver.com/recipes/vegetable-recipes/harry-hill-s-vegetarian-thali/), eggplant curry (https://thepeskyvegan.com/recipes/aubergine-curry/ – I used double amount of eggplant and oven roasted with some garlic salt and without the skin first), tarka daal (used the Spice Tailor kit and added a big handful of fresh baby spinach https://lifeshape.com.au/weight-loss-tips/food-and-diet/product-review-the-spice-tailor-classic-tarka-daal/), pappadums and mango chutney.

Looks good, Indian has been my favorite cuisine (with Korean as a close contender) to learn to cook since becoming vegetarian!
I used to get an eggplant curry from restaurant a few years ago that was absolutely delicious. I’m going to give this recipe a try and 🤞🏻 hopefully it will be just as tasty! Thank you
I also really like those spice tailor kits. I usually freeze a few serves with rice to have for lunch.
