First attempt at buckboard bacon. Cured with Morton’s tenderquick.
Figured this is a good place to start with making cured meats. It came out perfect. Cured in fridge for 8 days flipped and massaged each day, 45 minutes soak out, then smoked for about 5hrs to 145°
