All the settings on my cure chamber were good and it was down 30% weight. Smells and little funky, and tried a little piece. And it tasted a bit weird. Could have also been because I neglected to season it. Does this seem okay?

  2. This was my first attempt at coppa, It was down 30% weight so I thought I’d cut it open. It smells a bit funky and I tried a little piece, but it tasted a little chewy and bland. Might have been because I neglected to season it post cure. Does this look okay?

  3. I just started curing my first today! From this picture it seems to be correct, I’m going for a spicy coppa so I seasoned my cure.
