It’s a Panasonic mini fridge which gets to about 48f/9C and I’d really like to turn it into a solid meat chamber. I just got an Arduino delivered and am hoping to use it to set up automatic humidity control and some sort of airflow. Would it be possible to get the chamber ready to use and effective for under $100 without making any permanent changes to the fridge (holes)?

Looks great as long as it works! And I have not made any permanent modifications to my fridge so the key is if you can route any wires under the seal.
The seal strip on mine is strong and handles it fine.
I put a pan of salt water in mine and make sure to open the door at least once day. If you have a lot of product and humidity is to high you can place some charcoal bricks in a pan. The smallest fan was too big for mine and no room for humidifier and de humidity it was a waste of time for me just start bigger
