Hey guys!
I’ve just done a recent batch where I’ve used T-SPX as the starter culture, everything else as normal. My question is, is it possible to ferment too quick and will that have ill affects?
It has been roughly 40 hours of fermenting at 25c as it’s a little warm where I live. I’ve seen a good colour change and the smell is good. My tester piece is currently testing at 5.01pH. It’s it a good idea to continue the fermentation through to the recommended 72 hours or should I cut it here and hang them given I don’t want them too sour.
Any thoughts would be appreciated cheers!

From reading ALOT I think you would want to pull it or it may go sour
