    Wild Cottontail rabbit with a ramp and herb mousseline filling. Wrapped with homemade cold smoked bacon. Served over homegrown succotash with heirloom lima beans and ramps.

    I served it with a brilliant green ramp sauce (it was for a ramp themed foraging dinner) but neglected to take a sauced picture. I had extra mousseline so next time I’ll reserve some leg meat to fill in the loin position in the rump portion and make it look more uniform. The bacon gave it a little cure ring.
