315 Calorie lunch – pan fried curry rice with tofu, melon, and blueberries

To make 4 servings of curry rice: microwave a [10 oz bag of peas and carrots](https://www.target.com/p/organic-frozen-peas-and-carrots-10oz-good-38-gather-8482/-/A-79582391) for 1 minute combine with 250 g of cooked rice and pan fry. Add 3/4 of Edwards and sons curry cube that has been dissolved in hot water. Throw in chopped green onion toward the end.

    Brown 95 g of extra firm tofu and add the rest of the curry mixture. Add a dash of soy sauce and to thicken it add a little cornstarch dissolved in water.

    Fruit: 85 grams of cantaloupe and 61 g blueberries

    I typically eat a light breakfast and lunch and save my calories for a heavier dinner and snacks
