  1. Impossible enchiladas rancheras

    Ranchero sauce:
    2 cans Rotel
    1/4 white onion
    2-3 cloves garlic
    1/4 bunch cilantro
    Salt & pepper

    Blend, heat some oil in a small saucepan, add salsa and simmer until it darkens. Serve warm

    Impossible Filling:

    Mix ground impossible with salt pepper and no-beef seasoning (I use this one Frontier Co-op No-Beef Broth Powder 1 Pound Bag https://a.co/d/0Xu5rIS) and bake on a lined and oil sprayed tray at 400 F for 10 min or until cooked through

    In an oiled cast iron skillet heat corn tortillas, add filling, fold over and fry on both sides until crispy. Serve with warm ranchero salsa, Crema, sliced white onion, cilantro and Cotija cheese!

  2. These are so so good I make them once a week! Sometimes red sometimes green, shredded tofu works really well in these too.
