Crispy cauliflower and jollof rice

  1. I wanted to try a ‘buffalo cauliflower’ type thing, so I adapted a recipe I found in a magazine. I did this:

    1. Cut 1 whole cauliflower into chunks
    2. Rolled the cauliflower around in a baking dish spread with olive oil, added 1 beaten egg, lots of paprika (I’d estimate 4-5 teaspoons) and a liberal sprinkling of peri peri salt
    3. Thoroughly covered the cauliflower in the mixture then sprinkled over 2 tablespoons of flour.
    4. Covered liberally in golden breadcrumbs
    5. Baked at 190c in a fan oven for about 45 minutes until it looked crisped

    I served the combo with some creme fraiche for dipping the cauli and topped with chilli flakes. nom nom nom.
