first time trying this out – adobo recipe is from @johnnymeatless on insta!! i subbed red wine vinegar because it’s what i had but i would love to try it again with rice vinegar
the garlic fried rice:
1.5 cups of rice
2.25 cups of water
1 tsp (ish) of salt
10 cloves of garlic
smattering of garlic skins
2tbsp cooking oil (i used vegetable)
cook the rice in 2.25 cups of lightly salted water for 18-20mins. leftover rice is ideal for this recipe, but i let the rice cool in the fridge for about 45 mins after cooking.
heat up oil on medium high heat in a skillet. when the oil is hot, add the garlic and salt. sauté the garlic until it begins to brown and crisp. i prefer mine extra crisped!
add the rice and stir in the garlic and oil. let the rice stir-fry for about five minutes, or until it begins to crisp slightly. this may take longer if the rice was prepared recently and is more moist.
