  1. Someone else posted their night at Ever, but without photos, so I thought I’d add my own as a lot overlapped.

    My thoughts:

    1. Oscietra: I’m a bit tired of foam, but this was a delicious and refreshing open. Only issue I had with it is that once you cut the honeydew the cav spilled into the foam. The edge of the spoon was as thick as the diameter of the caviar making it difficult to scoop up, making subsequent balanced bites a chore.
    2. Hamachi: this is their signature dish, changes in texture as it warms. I’ll be candid, given all the hype I found this to be a boring and bland dish. Hamachi deserves better.
    3. Asparagus: Fucking fabulous. I don’t know how much heroin they put in this dish, but it was the exact right amount.
    4. Rabbit: delicious but maybe a little forgettable following the asparagus
    5. Scallop: perfectly cooked, delicious combination, but nothing too surprising
    6. Pork cheek: this had both pork and a piece of pork stuffed pasta. I lingered over this dish. Savory perfection. Definitely the highlight of the night.
    7. Miyazaki: I agree this was a disappointment. Personally, I think it’s the cut of the steak – cut into this plank and seared on all 4 sides it’s going to be hard NOT to overcook. All 3 of ours’ were definitely way over. The tendon on the crisp was the best part of this dish (and one of my favorite bites of the evening). Tasty otherwise.
    8. Banana & fruit in a gel: beautiful to the eye and well-balanced and delicious on the palate.
    9. Chocolate: a decadent, fatty turn from the fruit dessert preceding. Strawberry added a nice acidic kick. Nothing shocking though.
    10. Waffle: whatever heroin didn’t make it into the asparagus was here. Fabulous one bite finish.

    The setting is beautiful and ethereal. Definitely the most impressive space I’ve been in yet. Service also really is overwhelmingly impressive. They noticed that I was enjoying the butter that went with bread in 3 courses and kept bringing me more. It started to feel a bit like the broken emulsion scenes in “The Menu” at one point, but I think it was well-intentioned. Got to go into the kitchen. Silent as a mouse.

    Overall great experience. Would repeat. Prefer the food at Oriole.

    EDIT: totally forgot to talk about pairings. My wife and I did the wine, my son did the non-alcoholic pairing. Wines seemed to focus on rarities and wines that rarely found their way out of their native regions or into the US. I found them to be interesting and largely additive to the meal. The non-EtOH paring was supposed to be a combination of mocktails and teas. What we found it to be was A mocktail and a shit-ton of tea. If you don’t REALLY like tea, it might be best to give it a miss.

  2. I went last fall and found the food to be forgettable. The bread and the seasonal corn course (it’s featured in their Epicurious video for those interested) were the highlights. For the price, I expected more and have had better for significantly less. All of that said, the service and the wine list were phenomenal.

  3. Service was outstanding when I dined there in 2021. But food was absolutely forgettable.

  4. Ok everything except the hamachi and pretzel look delicious. The pretzel looked like a piece of poop lol. I’m sure it tasted great though.

    Another “everything looked great by the hamanchi.” That kindly looked like frozen ham someone had gone at with a potato peeler. That having been said what stunning presentation otherwise!

  6. Going to sound like a dick, but that square plate kind of seems outdated in dining trends today. The last course definitely screams Alinea back to when Curtis worked under Grant Achatz, which is intriguing.
