Pancetta, about 2 1/2 weeks in, white penicillin mound growing on other side, this is only affecting this side. Thanks!

It looks like it corresponds to the metal grate. Probably has something to do with that, like rust marks or some sort of interaction.

Looks like oxidized aluminum.
Those racks are stainless coated aluminum. And it’s now been degraded.
Once mixed with salt it will cause oxidation. And a gross grey blue discoloration.
