Boil 2 and a half cups of rice for 15 to 18 minutes, make sure the rice still retains moister. You want it “sticky”.
Saute 12 baby tomatoes with half a tablespoon of Old Bay in olive oil or vegetable oil (I’d suggest doing it in Olive oil) for no more than 2 minutes. When that’s done put them off to the side.
Saute 8 chopped mushrooms with a half of a table spoon of Old Bay in Olive oil or vegetable oil. Saute for 8 minutes on high heat.
When the mushrooms are done you can mix the tomatoes and mushrooms with the rice. Next fry a can of red beans for 5 to 6 minutes. When that is complete mix with the rice and serve.
