  3. Lomo – Smothered with homegrown, homemade smoked paprika for a lovely orange hue on the outside.

    Finocchiona – Homegrown fennel seeds, garlic, black pepper, chianti.

    Soppressata – Homegrown chili, fennel seeds, black pepper, white wine.

    Fiocco – Just salt.

    All hung to dry for about 130 days in my crawl space over the winter.
