1. Peel and slice the potatoes into thin slices and fry in a pan over a medium heat until tender but not browned.
2. Beat the eggs, add salt and mix in a large bowl.
3. Add the potatoes to the large bowl to make a round mixture.
4. Return the mixture to the frying pan and cook over a medium heat for about 5 minutes on each side.

This looks delicious!
Tortilla española (tortilla de patatas) and arroz cubano were the only two dishes I missed when I gave up eggs. They were my favorite foods when I lived in Barcelona, my host mom made one or both weekly. I learned to make a non-egg version of each and it hits the spot when I’m craving the dish but deep down I know they’re so much better with egg.

Ooooh I should make one again! Something I miss dearly from Spain. That and …pan con Tomate? Forgot the name. Breakfast, toasted bread or bun with a tomato “paste”. Are onions a traditional ingredient?
Also, why is _tortilla_ okay, but eggs in mustard sauce are too simple? 🙁
