While I really enjoyed my meal there last year, the crazy number of courses was confusing. I ended up with 3 or 4 dishes with very similar ingredients and felt like they could of dropped down course count and made the progression a little cleaner.
I did the wine as well as the non-alcoholic pairing to see the difference. I actually liked the non-alcoholic pairing better, but I’m also not a giant fan of South American wines (lot more earthy and minerally than I like).
Did they take you into the experiment kitchen? Thought that was a cool touch.
I always wonder how these porous, oddly shaped dishes are sanitized between guests.
did you also have the innoculated cherimoya? that was my favorite!

Beautiful. I went to Borago in 2018 and was blown away by the tasting menu and wine pairing. They were so kind too; I arrived 30 minutes late nearly in tears due to a traffic jam, and they were like “don’t worry, you’re on time!!!” :’)
