So I work at an Italian restaurant that has Arrabbiata on the menu, however their version has salami in it, so I made my own mushroom version.

  1. For the sauce:

    2 gloves of garlic
    1tsp tomato paste
    1tsp Mixed herbs
    1tsp paprika
    1tsp chilli flakes (or fresh chilli)
    Salt and pepper to taste
    250g chopped tomatoes

    For the pasta

    Use any kind of pasta that you’d like
    I added 6 mushrooms (sliced)
    A quarter of red pepper (diced)
    Half of a red onion
    And 2 pring onions (diced)

    Fry off your pepper, onion, and spring onion until soft, add your mushrooms and fry until cooked.

    Add all the herbs/seasoning and mix in with your cooked vegetables, add your tomato puree and stir to combine. Add your chopped tomatoes and let simmer for 5-10 minute.

    Once your pasta is cooked to your liking add everything into the pan and mix well.

    I topped mine with spring onions and cheddar cheese

  2. Seems like a waste of mushrooms – arrabiata doesn’t normally have salami in it and the spice would surely just overpower something as delicate as mushrooms.
