  1. * 123 g tofu, extra firm
    * 68 g red bell pepper
    * 15 g basil
    * 118 g white rice

    * spray oil
    * 1/4 of sauce recipe below:

    Sauce for 4 servings:
    * salt & pepper to taste
    * 1 T sambal oelek chili paste
    * 1/3 c soy sauce
    * 2 T rice vinegar
    * 1 T brown sugar
    * 2 cloves garlic, minced
    * 1 tsp fresh ginger, minced
    * optional: vegan fish sauce (I didn’t use it, tasted great anyway)

    To make: pan fry tofu, remove from pan. Pan fry bell pepper and toward the end add in sauce, basil, tofu. Serve with rice.
