* 1/3 cup marinara sauce

* ½ cup low calorie plant milk

* 1 T vegan chicken salt*
* ¼ cup flour
* 1/8 cup oat fiber (optional)
* 1/8 c panko
* Optional – ground pepper, other seasonings

* 135 g zucchini
* 90 g summer squash
* 5 medium mushrooms
I made this a while back, just now posting the pic. The instructions go something like this: mix Just egg with low calorie plant milk, also mix together the flour, chicken salt, oat fiber, panko, seasonings. Cut up veggies and coat them with the egg mixture and then dip in flour mixture. Bake in air fryer or convection oven until half way done and then spray them with neutral spray oil to get them to brown and crisp. I think the temperature setting was 400 F and baking time was minimum 30 minutes.
If you don’t have chicken salt you can use other spices: salt, onion powder, garlic powder, paprika
Important – I originally tested this recipe with all oat fiber and no flour (to save calories) and it tasted like fried cardboard. No amount of added spice could cover up pure fried oat fiber taste, lol. I tried though!
Eta – I also tried this without the Just Egg and it didn’t work because the flour/panko barely stuck to the veggies. The Just Egg was essential for taste and texture. The more Just Egg you use the better it will come out. 3 T is bare minimum.
