This is my favorite easy meal!

This can be changed to fit whatever flavor you are looking for (pizza, Mexican, Italian, etc)

This specific batch is….

Ingredients
1 onion
2 yellow peppers
1 red pepper
4 red potatoes
Garlic to taste
2 large tomatoes or a handful of cherry tomatoes
12-16 eggs (depends on the amount you like)
One bag of Mexican cheese

Instructions
– preheat oven to 400
– dice all veggies
– preheat a well seasoned, large cast iron
– sauté garlic and onions until soft
– add potatoes and cook until almost soft
– add diced peppers and cook 3-5 min
– hand mix all eggs in a bowl
– pour eggs into pan
– continue to scrape eggs until they are about 60% cooked
– put diced tomatoes on top
– cover too with cheese
– put cast iron dish in the oven
– cook until cheese is browned
– when finished, remove and let sit for 10-15 min
– we love to top with cilantro cream sauce!
– ENJOY!

    I do a similar kind of dish that I call my skillet frittata… ranch style potatoes, with diced onions and green peppers, sliced “sausage”, and/or crumbled “bacon”… cook those on the stove top until just about to brown… pour over that top four beaten eggs in the skillet, and continue to cook on stovetop, adding pepperjack cheese, until egg is set on bottom, then pop into oven and broil until the top half is done and a just a crispy brown … mmm 😋
