Sometimes cooking a new dish just for you seems like a hassle, but you don’t want a repeat of the multi-serving dishes in the freezer. As someone who has to keep an eye on nutrition, just thought I would share two recipes I rely on for [fast](https://pickledplum.com/miso-ramen-recipe/) and [hearty](https://www.seriouseats.com/vegan-ramen-miso-creamy-vegan-vegetarian-food-lab-recipe) ramen. A flexible dish concept that can result in very satisfying mouthfeel and yummy variations.

ETA: I tend to use various miso pastes to change the overall taste profile but always combine with water from soaking dried shiitake mushrooms!

  1. You can purchase vegetable stock low salt also if you are unsure of making miso you can buy green ottoman wire miso to add to recipe as required.there are many different variations of veg to suit vegetarian taste

    The hearty recipe looks great but the fast recipe doesn’t seem to be vegetarian???? I assume you sub vegetable stock for the chicken stock?
