Waldhotel Sonnora, Dries, Germany- September 2022. Probably the best meal I’ve had in Germany, and definitely in my top 10 in Europe. Fish dishes were slightly stronger than meat, and I know you can ask for an all fish menu, where scallop tartare replaces the iconic beef. Will revisit whenever I have the chance. I still dream of the rum baba. If I recall correctly, the menu was €258 plus a supplement of €46 for the beef tartare.

A langoustine crudo dish which I had instead of foie-gras
Foie-Gras marinated in ice wine with walnuts and iced celer on a cream of apple, Muscat and champagne vinegar
Beef-Tatar with N 25 Caviar-Selection
served on “Potato-Rösti”
Langoustines “Royale” sautéed in nut butter with compote of physalis and braised pointed peppers, reduction of crustaceans and oriental spices
Grilled Wagyu Entrecôte “Australia”
with vinaigrette of aged soy sauce, sesame and nut butter
Gently grilled Turbot from the Vendée with bouchot-mussels “St. Brieuc”, fennel, anise and Iranian saffron
Saddle of Venison from Eifel with buckwheat crepe “Foie Gras”, istachio gremolata, orange flavours and Rouenaise Sauce “Sonnora”
Selection of raw-milk-cheeses from Maître Affineur Waltmann
Melange of marinated and iced peach with ginger and champagne “Billecart Salmon”
Baba au Rhum “Cadenhead’s 20 y” with grilled and marinated pineapple from Martinique and cream ice from Tahiti vanilla
Petits fours, mignardises, birthday cake.

Looks good. Not a bad price at all
Had one of my absolute best meals ever here, it’s quite unconceivable that Waldhotel gets so little attention.
The wine list is insanely well priced too, and the wine pairing here is possibly the best I’ve ever seen.
One of my favorite three star meals ever was here. The potato, tartare & caviar dish in your first pic is so good.

Thanks for the write up. Went here for the first time earlier this year and was blown away. As good as it gets. Best meal on a trip that included multiple ***. And, yes, pricing on the wine list is excellent.
Looks delicious! Don’t think I’ll ever choose to eat there seeing as they serve Fois-Gras, but the rest looks great.
